Try this summery and healthy wrap that is super quick and easy to prep and cook!

Ingredients (serves 2, adjust accordingly):

  • 200g chicken breast
  • generous squeeze of lime juice
  • ½ tsp mild chilli powder
  • 1 garlic clove
  • 1 tsp olive oil
  • 2 wraps (choose your favourite; white, wholemeal, seeded etc)
  • 1 avocado
  • 1 red pepper
  • Coriander

Prep time: 5mins

Cook time: 10mins

Method:

  • Prep the avocado by removing the stone & cutting in half.
  • Chop the garlic clove and coriander.
  • Thinly slice the chicken breast at an angle.
  • Mix the chicken with the lime juice, chilli powder and garlic in a bowl to season.
  • Heat oil in a non-stick frying pan, then fry the chicken for a few minutes until cooked.
  • Warm the wraps following the pack instructions, usually 20-30 seconds.
  • Squash half an avocado onto each wrap.
  • Add the peppers to the frying pan until soft.
  • Pile the peppers and chicken onto the avocado.
  • Sprinkle some coriander over the top.
  • Roll up, cut in half, and enjoy!
