Try these delicious pancakes that are not only quick and easy to make but so tasty and very good for you. We have tfd’s very own Michelle to thank for this one – give them a go and let us know what you think!

 

INGREDIENTS  (to make 3 pancakes)

  • 1 banana
  • 1 egg

Optional:

  • Handful of oats
  • Seed mix
  • Fresh fruit
  • Greek yoghurt

 

METHOD:

  1. Mash banana in a bowl and beat in the egg
  2. Add a handful of oats/seeds (optional) and leave to stand for a few minutes
  3. In a frying pan add a little butter then once melted add a large spoon of the banana mixture
  4. Repeat until you have used all of the mixture
  5. Leave to cook on a medium heat for around 1 minute or until browned underneath
  6. Flip pancake and cook other side
  7. Once browned, plate up and serve with fresh fruit, Greek yoghurt and a drizzle of honey (optional)
