Ingredients/components (serves 4, adjust accordingly):

  • Wooden/metal skewers
  • Greaseproof paper
  • 500g 20% lamb mince
  • 1/2 white onion
  • Sprig of fresh parsley
  • 1tsp salt
  • 1tsp pepper
  • 1tsp cinnamon
  • 1tsp allspice
  • 1tsp fenugreek
  • 1tsp ginger
  • 1 egg
  • 1 clove of garlic
  • 1tsp olive oil

Method:

  • Preheat your oven to 180°C.
  • Grate (or finely chop) your onion.
  • Finely chop your parsley.
  • Finely chop/mince your garlic.
  • Combine all ingredients into a bowl.
  • Mix the kofta until all the ingredients are fully combined.
  • Now, if you are using wooden skewers, run them under water beforehand (this prevents them from burning during cooking)
  • Now pack the raw kofta onto the skewers, into tube-like shapes.
  • Line your baking tray with greaseproof paper.
  • Place your kofta onto the baking tray.
  • Cook the kofta for 20 minutes, flipping halfway through.
  • After taking out the oven, leave to rest for 5-10 minutes to keep them juicy.
  • Perfectly accompanied by flatbreads and tzatziki.
