Ingredients/components (serves 4, adjust accordingly):
- Wooden/metal skewers
- Greaseproof paper
- 500g 20% lamb mince
- 1/2 white onion
- Sprig of fresh parsley
- 1tsp salt
- 1tsp pepper
- 1tsp cinnamon
- 1tsp allspice
- 1tsp fenugreek
- 1tsp ginger
- 1 egg
- 1 clove of garlic
- 1tsp olive oil
Method:
- Preheat your oven to 180°C.
- Grate (or finely chop) your onion.
- Finely chop your parsley.
- Finely chop/mince your garlic.
- Combine all ingredients into a bowl.
- Mix the kofta until all the ingredients are fully combined.
- Now, if you are using wooden skewers, run them under water beforehand (this prevents them from burning during cooking)
- Now pack the raw kofta onto the skewers, into tube-like shapes.
- Line your baking tray with greaseproof paper.
- Place your kofta onto the baking tray.
- Cook the kofta for 20 minutes, flipping halfway through.
- After taking out the oven, leave to rest for 5-10 minutes to keep them juicy.
- Perfectly accompanied by flatbreads and tzatziki.
