Try this colourful and healthy dish that will feel like you are having a Chinese takeaway!

Ingredients (serves 2, adjust accordingly):

Marinade:

  • 200g chicken
  • Tbsp light soy sauce
  • 1.5 tbsp egg white
  • Tsp garlic puree

Sauce:

  • 25g honey
  • 30g ketchup
  • Tsp sriracha sauce
  • Tbsp apple cider vinegar
  • ½ tsp garlic
  • ½ tsp ginger

Others:

  • 20g cornflour
  • Garlic granules
  • Red chilli
  • Red pepper
  • Spring onion
  • 250g rice

Method:

  1. Cut the chicken into thin strips. Add soy sauce, egg white and garlic puree, mix well and leave to marinate.
  2. Season the cornflour with garlic granules and dip the chicken into the cornflour.
  3. Spray a pan/wok with low calorie spray and cook the coated chicken.
  4. Mix together the honey, ketchup, sriracha sauce, apple cider vinegar, garlic and ginger and add the cooked coated chicken.
  5. Pan fry the red pepper and chilli, once it starts to soften add in the sauce and chicken to combine well until it simmers.
  6. Cook rice per packet instructions and serve the chicken mix over the rice with a sprinkle of spring onion and chilli to finish.
