Try this Greek dish that is perfect for a summer evening and filled with protein!

Ingredients (serves 4, adjust accordingly):

  • 680g diced chicken breast
  • Extra virgin olive oil for the pan
  • 4 Greek style flatbreads

Marinade:

  • 200g Greek yogurt
  • Juice of 1 large lemon
  • 2 tbsp extra virgin olive oil2 tbsp red wine vinegar
  • 3 garlic cloves, crushed
  • Salt, generous pinch to taste
  • Black pepper, generous pinch to taste
  • 1 tbsp oregano
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander

Optional Toppings:

  • Tzatziki Sauce
  • 1 large tomato, sliced
  • 1 cucumber, sliced
  • 1 green pepper, cored and sliced
  • 1 small red onion, sliced into half moons
  • Pitted olives

Method:

  1. In a larger bowl, combine the marinade ingredients, mix well. Add the chopped chicken and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight). Meanwhile prepare the optional toppings if required.
  2. Heat 1 tablespoon extra-virgin olive oil in a non-stick pan over medium-high heat. Before adding the chicken to the pan make sure to shake off any excess marinade. Add the chicken then cook thoroughly occasionally turning until it is cooked through with no pink meat left.
  3. Sprinkle your flatbreads with a little water and pop in the oven or under the grill for a few minutes to warm them through.
  4. Assemble the chicken gyros. Spread Tzatziki sauce over your flatbread, then add and top with tomato, cucumber, green pepper, red onion and olives as you like. Wrap the flatbread up and enjoy!
