Try this feel good soup to keep you warm through the chilly months…

Ingredients (serves 4, adjust accordingly):

  • 1 red onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 garlic clove, crushed
  • 5cm piece fresh root ginger, finely chopped
  • 2 tbsps olive oil
  • 2 medium sweet potatoes – cleaned, diced, skins left on
  • Handful of mushrooms, sliced
  • Handful goji berries
  • Veg/chicken stock, to cover
  • Salt & pepper

Method:

  • Put onion, chilli, garlic & ginger in a large saucepan with the oil. 
  • Cook over medium heat for 5 minutes, until onion softens.
  • Add sweet potatoes & mushrooms and goji berries to the pan. 
  • Stir well & cover with enough stock.
  • Simmer well 10-15 minutes, until potatoes is soft. 
  • Season with salt & pepper.
  • Carefully add the soup in batches to a blender and blend until smooth.
