Try this feel good soup to keep you warm through the chilly months…
Ingredients (serves 4, adjust accordingly):
- 1 red onion, finely chopped
- 1 green chilli, finely chopped
- 1 garlic clove, crushed
- 5cm piece fresh root ginger, finely chopped
- 2 tbsps olive oil
- 2 medium sweet potatoes – cleaned, diced, skins left on
- Handful of mushrooms, sliced
- Handful goji berries
- Veg/chicken stock, to cover
- Salt & pepper
Method:
- Put onion, chilli, garlic & ginger in a large saucepan with the oil.
- Cook over medium heat for 5 minutes, until onion softens.
- Add sweet potatoes & mushrooms and goji berries to the pan.
- Stir well & cover with enough stock.
- Simmer well 10-15 minutes, until potatoes is soft.
- Season with salt & pepper.
- Carefully add the soup in batches to a blender and blend until smooth.
