Try this quick and easy chicken satay with spicy pickled cucumber and rice!
Ingredients (serves 4, adjust accordingly):
- 2 250g packets of brown long grain rice (cooked)
- 500g chicken breast (diced)
- 1 cucumber
- 50g peanut butter (smooth)
- 50g sweet chilli sauce
- 50g creamed coconut block
- 30ml rice vinegar
- 30ml soy sauce
- 1tsp chilli flakes
- 1tsp sugar
Prep time: 5 minutes
Cook time: 15 minutes
Method:
- Boil half a kettle, heat a large wide pan with a drizzle of vegetable oil over a medium high heat, dice your chicken breast and add into the pan when hot, cooking for 10-12 minutes.
- Slice cucumber very thin, and add to a bowl with your rice vinegar, sugar, and chilli flakes, give everything a mix and allow to pickle for a few minutes.
- Chop your creamed coconut block, and dissolve in 200ml of boiling water, once fully dissolved, add peanut butter, soy sauce and your sweet chilli sauce, mix up to leave a peanut sauce.
- Heat your rice packets up together.
- Add your peanut sauce to the pan with the chicken, mix up and cook for a further 2-3 minutes until sauce is thickened.
- Plate up your chicken satay, with the pickled cucumber and rice, and add soy sauce or sriracha to the rice if you would like!
