Get the BBQ out for a slight twist on this delicious dinner…

 

Ingredients (serves 4 – adjust amounts accordingly):

  • 1 x whole chicken
  • Seasoning – salt, pepper, garlic
  • 1 x chopped onion
  • 1 x chopped red pepper
  • 150g chopped mushrooms
  • 8 x small tortilla wraps
  • Handful grated cheese
  • Handful lettuce
  • 1 x fajita seasoning mix

Optional toppings:

  • Sour cream
  • Salsa
  • Guacamole

 

Method:

  • Season the whole chicken with salt, pepper and garlic
  • Season the whole chicken with salt, pepper and garlic
  • Place the whole chicken on the BBQ (indirect heat) and cook for 1hour-1hr30 dependent on the chicken size
  • When cooked, take off the BBQ and set chicken down to cool
  • Carve the meat and put to one side
  • In the griddle pan on the BBQ cook the onion, pepper & mushrooms
  • Add the carved chicken meat to the griddle pan
  • Add the fajitas seasoning mix and leave for further 5mins
  • Serve with small tortilla wraps, with optional cheese, lettuce & toppings
