Get the BBQ out for a slight twist on this delicious dinner…
Ingredients (serves 4 – adjust amounts accordingly):
- 1 x whole chicken
- Seasoning – salt, pepper, garlic
- 1 x chopped onion
- 1 x chopped red pepper
- 150g chopped mushrooms
- 8 x small tortilla wraps
- Handful grated cheese
- Handful lettuce
- 1 x fajita seasoning mix
Optional toppings:
- Sour cream
- Salsa
- Guacamole
Method:
- Season the whole chicken with salt, pepper and garlic
- Season the whole chicken with salt, pepper and garlic
- Place the whole chicken on the BBQ (indirect heat) and cook for 1hour-1hr30 dependent on the chicken size
- When cooked, take off the BBQ and set chicken down to cool
- Carve the meat and put to one side
- In the griddle pan on the BBQ cook the onion, pepper & mushrooms
- Add the carved chicken meat to the griddle pan
- Add the fajitas seasoning mix and leave for further 5mins
- Serve with small tortilla wraps, with optional cheese, lettuce & toppings
