Try this super healthy cauliflower salmon bowl to serve one! Adjust the ingredient amounts to serve more!

Ingredients (serves 1, adjust accordingly):

  • 90g Spinach  
  • 2tsp Balsamic Vinegar  
  • 109g Cauliflower Rice (frozen unprepared) 
  • 100g Cubed sweet potato 
  • 200g Pink Salmon raw 
  • 1 ½ tsp Olive oil 
  • 2tsp Maple syrup  

Salmon: 

  • Preheat oven to 180/ 160 fan.  
  • Place salmon in an oven proof dish and brush with oil or butter. Season. 
  • Cover the dish with tinfoil if tender salmon is preferred. Keep uncovered for crispier roasted salmon.
  • Roast for 10-15mins until opaque and easily flaked.  

Cauliflower rice: 

  • Add oil to a pan and heat. 
  • Cube sweet potato into bite size pieces. Add to pan and cover allowing to sweat for 8-10mins.  
  • Add cauliflower rice, and additional veg if you choose. 
  • Stir fry for 4-5mins.  
  • Serve the spinach, cauliflower rice and salmon on a plate.  

Dressing:  

  • Whisk together oil, vinegar and maple syrup and a pinch of salt.  
  • Top salmon with dressing. 
  • Enjoy!
