Try this quick and easy lamb samosas dish served with a salad of your choice and mango sauce!
Ingredients (serves 4, adjust accordingly):
- Side salad of your choice
- 500g lamb mince
- 12 mini wraps
- 2x carrots
- 60ml mayonnaise
- 50g mango chutney
- 2x shallots
- 30ml cider vinegar
- 2tbsp curry powder
- 2x garlic cloves
- 2tsp cumin
- 3tbsp plain flour
- 4tbsp olive oil
- Salt, sugar and pepper for seasoning
- 2xtsp nigella seeds (optional)
Prep time: 20 minutes
Cook time: 10 minutes
Method:
- Preheat oven to 200* C (fan) or 220* normal.
- Peel and dice shallots, top, tail and grate carrots and crush your garlic
- Heat a wide pan with vegetable oil over a high heat, add the shallots and carrots with a small pinch of salt and cook for 2-3 minutes, then add your lamb mince and cook until brown, mixing it in with the vegetables.
- Once the lamb is browned, add your garlic, cumin and curry powder, this is your spiced lamb filling.
- Mix 3tbsp of flour with 3tbsp of water in a bowl to create a thick paste, this will be used as a glue to close your samosas!
- Rub your ‘glue’ around the edge of a quarter of a tortilla, for your tortilla in half and firmly press to close the bottom half, but leave and opening at the top, then spoon in your spiced lamb mince and use any remaining ‘glue’ to close the top halves of the tortilla’s after they’ve been filled.
- Place on a baking tray, then brush them with olive oil. Once complete, cook in oven for 8-10 minutes.
- Whilst your samosas are cooking, add your cider vinegar with 4tbsp of olive oil, a pinch of salt, pepper and sugar and whisk, this is a salad dressing. When complete, add mayo, mango chutney and half of your nigella seeds into a bowl, and combine to create a mango mayo dip.
- Half your samosas, and serve with your side salad, drizzle in dressing and garnish with nigella seeds and dip away with your mango dip!
